About the Chef:

With more than a decade of experience under his belt in the gastronomic hotbeds of Toronto and Vancouver, Paul Marshall isn’t just your average chef. Paul learned the ropes at George Brown Culinary Institute, where he earned his Red Seal designation, and working alongside chefs Stephen Treadwell and Dario Tomaselli at the Queen’s Landing Inn and Oro Restaurant in Ontario. A move to the west coast and four-year stint at the Glowbal Collection later, today Paul finds himself at the helm of Cento Notti, the trendy eatery housed by Vancouver’s world-famous OPUS Hotel. As executive chef, Paul flaunts his culinary finesse with a progressive farm-to-table menu, utilizing the region’s freshest produce with an Italian bent. Look to Cento Notti to experience premium North American-Italian flavours prepared to reflect the industry’s hottest trends, from family-style dining to succulent, slow-cooked meals.
